Allulose, also known as Psicose or D-Psicose, is a naturally occurring "rare" sugar. Found in small amounts in fruits and sweeteners like figs, raisins, maple syrup, and more, it is commercially produced through enzymatic conversion from carbohydrates in sources like corn or sugar cane. Approximately 70% as sweet as sucrose, allulose shares similar taste, texture, and functionality. Nutritionally, it provides about 0.2 kcal/g, representing only 5% of the calories of sugar. Not metabolized and primarily excreted intact in the urine, it is considered a low-impact sugar.
